Aflatoxins are toxic metabolites of a class of fungi, such as Aspergillus flavus and Aspergillus parasiticus, which have strong carcinogenicity and are mainly present in grains, nuts, cottonseed, and some products related to human blood and animal feed. Aflatoxin M1 is a hydroxylated metabolite of aflatoxin B1 and a potent carcinogen. Milk and its products are one of the foods susceptible to aflatoxin M1 contamination. The EU has a limit of 0.05ppb for aflatoxin M1 in milk.
