L'ochratoxine A (OTA) est un m\u00e9tabolite secondaire toxique produit par certaines esp\u00e8ces d'Aspergillus et de Penicillium et est largement pr\u00e9sent dans les c\u00e9r\u00e9ales (comme les c\u00e9r\u00e9ales), les \u00e9pices, les fruits secs et les grains de caf\u00e9. L'ochratoxine A peut s'accumuler dans la viande des animaux et peut donc se retrouver dans la viande et les produits \u00e0 base de viande. Il poss\u00e8de une toxicit\u00e9 h\u00e9patique et r\u00e9nale aigu\u00eb, est t\u00e9ratog\u00e8ne, mutag\u00e8ne et canc\u00e9rig\u00e8ne, et pose de graves risques pour la sant\u00e9 humaine.
